1 can (15 oz) black beans, drained and rinsed

1 medium onion, finely diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade blend)

1/2 cup water

4 large flour tortillas

1 cup shredded lettuce

1 cup chopped tomatoes

1 cup shredded cheddar cheese

1/2 cup sour cream (optional, for creaminess)

1/4 cup fresh cilantro, chopped (for garnish)

Sauté the Aromatics: In a large skillet, heat a drizzle of olive oil over medium heat. Once the oil is shimmering, add the diced onion. Sauté for about 3-4 minutes, or until the onion is translucent and slightly softened. Then, stir in the minced garlic and sauté for an additional minute until fragrant.

    Cook the Beef: Turn the heat up to medium-high and add the ground beef to the skillet. Use a spatula to break the meat apart as it cooks, ensuring even browning. Cook for about 5-6 minutes, or until the beef is fully browned and no longer pink. If there’s excess fat, drain it from the skillet to avoid a greasy filling.
