1 cup diced tomatoes (canned or fresh, drained if canned)

1 tablespoon taco seasoning

Preheat the Oven: Start by preheating your oven to 375°F (190°C) so it's hot and ready when the peppers go in.

    Prepare the Bell Peppers: Carefully slice the tops off the bell peppers and remove the seeds and membranes. If any of the peppers wobble, you can trim a tiny bit off the bottom, ensuring you don’t cut through.

      Cook the Beef Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing them for about 2-3 minutes until the onion is translucent and fragrant.
