Ingredients

8 oz (about 225g) penne pasta

1 tablespoon extra virgin olive oil

3 cloves garlic, finely minced

1 can (14 oz) crushed tomatoes

1/2 cup heavy cream or light coconut milk for a healthier alternative

1 teaspoon Italian seasoning blend

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and freshly cracked black pepper to taste

1/2 cup grated Parmesan cheese (substitute with nutritional yeast for a vegan option)

1 cup fresh basil leaves, coarsely chopped

Fresh basil sprigs for garnishing

Instructions

Cook the Pasta:

    - In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package directions until al dente.

      - Drain the pasta, but be sure to reserve about 1/2 cup of the cooking water for later use. Set the pasta aside.

        Sauté the Garlic:

          - In a spacious skillet, warm the olive oil over medium heat. Once hot, add the minced garlic and sauté for 1-2 minutes until it becomes aromatic but avoid browning.

            Incorporate the Tomatoes:

              - Pour the crushed tomatoes into the skillet. Sprinkle in the Italian seasoning along with the optional red pepper flakes. Season generously with salt and pepper. Allow it to simmer for around 5 minutes, stirring occasionally to blend the flavors.

                Create a Creamy Sauce:

                  - Reduce the heat slightly and gently stir in the heavy cream (or coconut milk). Mix thoroughly until the ingredients are well combined, and allow the sauce to simmer for another 3-5 minutes until it thickens slightly.

                    Combine Pasta and Sauce:

                      - Add the cooked penne to the creamy tomato sauce, tossing gently to ensure every piece is coated. If you find the sauce too thick, gradually add some of the reserved pasta water until you reach your preferred consistency.

Finish with Cheese and Fresh Basil:

                          - Remove the skillet from heat. Stir in the grated Parmesan cheese, mixing until it melts into the sauce and creates a creamy texture. Then, fold in the chopped fresh basil gently, allowing the flavors to infuse.

                            Serve:

                              - Plate your creamy tomato basil pasta, garnishing with additional fresh basil sprigs and a sprinkle of Parmesan cheese on top for a delightful finish. Enjoy your delicious meal!
