1 lb (450g) medium shrimp, peeled and deveined

2 tablespoons honey

3 tablespoons low-sodium soy sauce

1 tablespoon rice vinegar

2 teaspoons cornstarch

2 tablespoons vegetable oil, divided

1 bell pepper (red or yellow), sliced into thin strips

1 cup snap peas, trimmed at the ends

3 green onions, chopped (separating the white and green parts)

2 cloves garlic, minced

1 teaspoon freshly grated ginger

Cooked rice or quinoa, for serving

Sesame seeds, for garnish

Optional: red pepper flakes for added heat

Prepare the Marinade: In a medium mixing bowl, combine the honey, soy sauce, rice vinegar, and cornstarch. Whisk these ingredients together until smooth and well integrated. Reserve half of this mixture in another bowl for later use.

    Marinate the Shrimp: Add the shrimp to the bowl containing the remaining marinade. Toss the shrimp gently to coat them evenly, then let them sit for 10 minutes to soak up the flavors.

      Prep the Vegetables: While the shrimp are marinating, wash and chop the vegetables. Slice the bell pepper into thin strips, trim the snap peas, and chop the green onions, keeping the white and green parts separate for later use.

        Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil shimmers, add the marinated shrimp in a single layer. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Once cooked, remove the shrimp from the skillet and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, toss in the minced garlic, grated ginger, sliced bell pepper, and snap peas. Stir-fry the mixture for 3-4 minutes, allowing the vegetables to become tender yet maintain their crispness.
