Ingredients

For the Waffles:

1 cup all-purpose flour

1 tablespoon granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1 cup milk

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 medium apple, peeled and finely chopped (preferably Granny Smith for a tart flavor)

For the Apple Filling:

2 medium apples, peeled, cored, and sliced

2 tablespoons unsalted butter

2 tablespoons brown sugar

1 teaspoon ground cinnamon

Juice of 1/2 lemon (to enhance flavor and prevent browning)

To Assemble:

Maple syrup (optional, for serving)

Whipped cream or yogurt (optional, for topping)

Chopped pecans or walnuts (optional, for garnish)

Instructions

Prepare the Waffle Batter:

In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until well-blended. Gradually add the wet mixture to the dry ingredients and stir gently until just combined. Carefully fold in the finely chopped apple until evenly distributed.

      Preheat the Waffle Maker:

Turn on your waffle maker according to the manufacturer’s instructions and allow it to heat up while you prepare the batter.

          Cook the Waffles:

Lightly grease the waffle maker with cooking spray or a small amount of oil. Pour enough batter into the preheated waffle maker to cover the bottom. Close the lid and cook for about 3-5 minutes, or until the waffles are golden brown and crispy. Carefully remove the waffles and repeat the process until all the batter is used, yielding approximately 8 waffles.

              Cook the Apple Filling:

In a large skillet over medium heat, melt the butter. Add the sliced apples, brown sugar, ground cinnamon, and lemon juice to the skillet. Stir well to combine, then cook for 5-7 minutes, stirring occasionally, until the apples are tender and slightly caramelized.

                  Assemble the Sandwich Stacks:

Take one waffle and spoon a generous portion of the warm apple filling on top. Place another waffle on top to create a sandwich. Repeat this process to create multiple stacks, layering waffles and apple filling as desired.

                      Serve:

Drizzle the assembled stacks with maple syrup, top with a dollop of whipped cream or yogurt if you wish, and garnish with chopped pecans or walnuts for an extra crunch.

                          Prep Time: 20 minutes | Total Time: 40 minutes | Servings: 4

                            - Presentation Tips: For an appealing presentation, stack the waffles slightly askew to showcase the apple filling, and garnish the plate with a light dusting of powdered sugar or a sprig of mint.
