1 cup cooked ham, diced into small pieces

1 can (15 oz) chili beans (with liquid)

1 cup corn (canned or frozen, drained if canned)

1 cup red bell pepper, diced

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced red bell pepper and sauté for about 3-4 minutes, stirring occasionally, until the pepper is tender and fragrant.

    Combine Ingredients: Add the diced cooked ham to the skillet along with the chili beans (with their liquid), corn, ground cumin, smoked paprika, garlic powder, and a pinch of salt and pepper. Stir everything together and let the mixture simmer for about 5-7 minutes, stirring occasionally to ensure it heats evenly and the flavors meld.

      Assemble the Wraps: Place a whole wheat tortilla flat on a clean surface or plate. Spoon a generous amount of the ham chili mixture onto the center of the tortilla, ensuring you leave at least an inch of space around the edges. Evenly sprinkle a quarter cup of shredded cheddar cheese on top of the filling.

        Roll the Tortilla: Carefully fold the sides of the tortilla over the filling, then starting from the bottom, roll the tortilla tightly to encase all the ingredients. Make sure to roll it snugly to prevent any filling from falling out. Repeat this process with the remaining tortillas and filling.
