Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1 cup cold water

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Set your oven to 450°F (230°C). Line a baking sheet with parchment paper to facilitate easy cleanup after cooking.

Prepare the Cauliflower: Place the cauliflower florets in a large mixing bowl. Drizzle the olive oil over the florets, and season generously with salt and black pepper. Toss until the florets are evenly coated with oil and seasoning. Spread the seasoned cauliflower out in a single layer on the prepared baking sheet.

Mix the Batter: In a separate bowl, combine the flour, cold water, garlic powder, onion powder, smoked paprika, and a dash of salt and black pepper. Whisk together until smooth and well combined, creating a thick batter.

Coat the Cauliflower: Take each cauliflower floret and dip it into the batter, ensuring it is fully coated. Allow any excess batter to drip off before placing the battered florets back on the baking sheet.

Bake the Cauliflower: Place the baking sheet in the preheated oven and bake the cauliflower for 25-30 minutes. Halfway through the baking time, flip the florets to achieve an even golden color and to ensure crispiness.

Toss in Buffalo Sauce: Once the cauliflower is baked and crispy, transfer the bites to a large mixing bowl. Pour the buffalo sauce over the hot cauliflower and toss gently until each piece is thoroughly coated in the sauce.

Final Bake: Return the buffalo-coated cauliflower back to the baking sheet. Bake for an additional 10-15 minutes to enhance crispness and allow the flavors to meld.

Garnish and Serve: Remove the cauliflower bites from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy hot with your choice of dipping sauce, such as blue cheese or ranch dressing.
