Baked Pumpkin Oatmeal Cups

1 ½ teaspoons baking powder

1 teaspoon ground cinnamon

1 cup canned pumpkin puree

2 large eggs

1 cup milk (any variety; almond, oat, or cow's milk work great)

2 teaspoons vanilla extract

½ cup chopped walnuts or pecans (optional for crunch)

½ cup raisins or dried cranberries (optional for sweetness)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin with cooking spray or butter, or alternatively, line each cup with muffin liners for easier cleanup.

    Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, baking powder, ground cinnamon, ground nutmeg, salt, and packed brown sugar. Use a whisk to thoroughly combine these ingredients until evenly mixed.

      Mix Wet Ingredients: In a separate medium bowl, combine the canned pumpkin puree, large eggs, milk, and vanilla extract. Use a fork or whisk to mix until the mixture is smooth and creamy.

        Combine Mixtures: Pour the pumpkin mixture into the bowl with the dry ingredients. Gently stir the mixture together until just combined; be careful not to overmix. If you’re using them, fold in the chopped walnuts and your choice of dried fruit for extra texture and flavor.
