Ingredients

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon sea salt

¼ teaspoon black pepper

1 tablespoon fresh rosemary or thyme, finely chopped (optional)

¼ cup grated Parmesan cheese (optional for added richness)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). To facilitate easy clean-up, line a large baking sheet with parchment paper.

Prepare the Sweet Potatoes: Rinse the sweet potatoes under cold water and peel them. Cut the sweet potatoes into fry-shaped wedges, each about 1/4 inch thick. Aim for uniformity in size to ensure even cooking.

Mix the Seasoning: In a large mixing bowl, pour in the olive oil. Add the garlic powder, smoked paprika, ground cumin, sea salt, and black pepper. If you opt to use fresh herbs, chop them finely and add them to the bowl as well. Reserve the grated Parmesan for the last part of the cooking process if you're using it.

Coat the Fries: Carefully add the sweet potato wedges to the seasoning mixture. Toss them gently, ensuring that every piece is evenly coated with the flavorful mixture.

Arrange on Baking Sheet: Transfer the seasoned sweet potato fries to the lined baking sheet, spreading them out in a single layer. Be sure not to overcrowd the fries, as this will hinder their ability to crisp up.

Bake the Fries: Place the baking sheet in your preheated oven. Bake the fries for 20–25 minutes, flipping them halfway through the cooking time to achieve an even crispiness. Look for a golden brown color on the outside as a sign they are ready.

Add Cheese (Optional): If you’re using grated Parmesan cheese for an extra layer of flavor, sprinkle it evenly over the fries during the last 5 minutes of baking.

Serve and Enjoy: Once baked to perfection, remove the fries from the oven and allow them to cool for a few minutes. Serve them warm with your favorite dipping sauce, such as aioli, chipotle mayo, or a tangy yogurt dip!
