2 cups whole milk

1 1/2 cups shredded sharp cheddar cheese

1/2 cup crumbled blue cheese (optional)

1 cup cooked, shredded chicken

1/2 cup buffalo sauce (plus extra for serving)

1/2 cup Panko breadcrumbs

1/4 cup grated Parmesan cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

Cook the Macaroni: Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente, about 7-8 minutes. Drain and set aside.

    Make the Cheese Sauce: In the same pot you used for the macaroni, melt the butter over medium heat. Once melted, add the flour, stirring constantly with a whisk for 1-2 minutes to create a smooth roux. Gradually whisk in the whole milk. Keep whisking until the mixture thickens to a creamy consistency, about 3-5 minutes.

      Season the Sauce: Once thickened, mix in the garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper, stirring well to combine the flavors.

        Incorporate the Cheese: Remove the pot from heat and add the shredded sharp cheddar cheese. Stir until completely melted and smooth. If using, fold in the crumbled blue cheese until well combined.

          Combine Chicken with Sauce: Gently fold the cooked macaroni and shredded chicken into the cheese sauce, ensuring everything is well coated. Drizzle in the buffalo sauce and stir until the mixture is evenly distributed.

            Chill the Mixture: Transfer the mac and cheese mixture to a large bowl. Cover it with plastic wrap and refrigerate for at least 1 hour, allowing it to firm up for easier handling.

              Preheat the Oven: Preheat your oven to 400°F (200°C), and line a baking sheet with parchment paper to prevent sticking.
