Ingredients

4 medium zucchinis

1 cup shredded cooked chicken (rotisserie chicken works wonderfully)

1/2 cup buffalo sauce (adjust to taste)

1/4 cup cream cheese, softened to room temperature

1/4 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional for those who love it)

2 green onions, thinly sliced (plus more for garnish)

1 tablespoon olive oil

Salt and pepper, to taste

Cooking spray or additional olive oil for brushing

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to prepare for baking.

Prepare the Zucchini Boats: Carefully slice each zucchini in half lengthwise. Using a small spoon, scoop out the seeds and some flesh to create a hollow boat shape, leaving about 1/4 inch of zucchini around the edges for stability. Brush the interior of the zucchini boats with olive oil and season lightly with salt and pepper.

Initial Baking: Arrange the zucchini halves, cut side up, on a baking sheet lined with parchment paper or lightly sprayed with cooking spray. Place them in the preheated oven and bake for 10-12 minutes, or until they begin to soften.

Create the Filling: While the zucchinis are baking, prepare the buffalo chicken filling. In a mixing bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, shredded cheddar cheese, and half of the sliced green onions. Mix thoroughly until all ingredients are evenly blended. If you enjoy stronger flavors, gently fold in the crumbled blue cheese at this stage.

Stuff the Zucchini Boats: Once the initial baking time is up, take the zucchini boats out of the oven. Carefully spoon the buffalo chicken mixture into each hollowed zucchini, distributing it evenly.

Final Baking: Return the stuffed zucchinis to the oven and bake for an additional 15-20 minutes, or until the filling is bubbling and the zucchinis are tender yet firm.

Serve and Enjoy: After baking, remove the zucchini boats from the oven and let them cool for a minute. Garnish with the remaining sliced green onions and, if desired, a drizzle of extra buffalo sauce. Serve warm and savor every delicious bite!
