2 tablespoons olive oil

2 large onions, thinly sliced

8 ounces mushrooms, sliced (button or cremini are great choices)

3 large eggs

1 cup heavy cream

1 cup shredded Gruyère cheese

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures it reaches the perfect temperature for baking while you prepare the filling.

    Caramelize the Onions: In a spacious skillet, warm the olive oil over medium heat. Add the thinly sliced onions along with a pinch of salt. Cook them slowly, stirring occasionally for approximately 20-25 minutes, or until the onions are beautifully golden brown and caramelized. If you notice the onions starting to stick to the pan, reduce the heat and splash in a bit of water. Once done, remove from heat and set the caramelized onions aside.

      Sauté the Mushrooms: In the same skillet, add a touch more olive oil if necessary.
