Ingredients

1 cup finely grated carrots (approximately 2 medium carrots)

1 cup peeled and grated apple (about 1 large apple, such as Granny Smith or Honeycrisp)

1 ½ cups all-purpose flour

1 cup brown sugar, packed

½ cup granulated sugar

½ cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

½ cup chopped walnuts or pecans (optional)

½ cup raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it with cooking spray to prevent sticking.

Prepare the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, packed brown sugar, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Whisk them together thoroughly to ensure they are well blended.

Mix the Wet Ingredients: In a separate bowl, whisk together the vegetable oil (or melted coconut oil), eggs, and vanilla extract until the mixture is smooth and creamy.

Combine Ingredients: Add the grated carrots and apple to the bowl with the wet ingredients and stir gently until the fruits are evenly coated.

Merge Wet and Dry Mixtures: Pour the wet mixture into the dry ingredient bowl. Stir gently, just until the ingredients are combined. It’s important not to overmix; a few lumps are okay! If desired, fold in the optional chopped nuts and dried fruit at this stage for added texture.

Scoop the Batter: Use a spoon or ice cream scoop to fill each muffin cup with the batter, filling them about three-quarters full to allow space for rising.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes. The muffins are done when a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then, carefully transfer them to a wire rack to cool completely.

Serve: Enjoy these delicious muffins warm or at room temperature. They make for a fantastic breakfast or a delightful snack!
