Ingredients

2 cups cooked chicken, shredded or diced

4 cups fresh broccoli florets (or frozen, thawed and drained)

2 cups cooked rice (white or brown)

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 can (10.5 oz) cream of chicken soup

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon Dijon mustard (optional for a flavor kick)

Salt and pepper to taste

1 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter

Instructions

Preheat the oven: Start by preheating your oven to 350°F (175°C).

Prepare the broccoli: If you're using fresh broccoli, steam the florets for about 3-4 minutes until they are tender yet retain a bright green color. Drain and set aside. If using frozen broccoli, ensure it is fully thawed and well-drained to prevent excess moisture.

Mix the casserole filling: In a large mixing bowl, combine the shredded chicken, steamed broccoli, cooked rice, half of the cheddar cheese, half of the mozzarella cheese, cream of chicken soup, milk, garlic powder, onion powder, and Dijon mustard (if using). Season with salt and pepper to taste. Stir thoroughly until all ingredients are evenly combined.

Assemble the casserole: In a greased 9x13 inch baking dish, evenly spread out the chicken and broccoli mixture, ensuring it’s well-distributed.

Top with cheese: Evenly sprinkle the remaining cheddar and mozzarella cheese over the top of the casserole for a cheesy, melty finish.

Prepare breadcrumbs: In a small bowl, mix the breadcrumbs with olive oil or melted butter until they're fully coated. This will give them a golden, crispy texture when baked. Sprinkle the breadcrumb mixture evenly over the cheese layer.

Bake: Carefully place the casserole in the preheated oven. Bake for 30-35 minutes, or until the top is golden brown and the cheese is bubbly and slightly crispy.

Serving suggestion: Once baked, remove the casserole from the oven and let it cool for about 5-10 minutes before serving. For a touch of color and freshness, garnish with finely chopped fresh parsley or chives if desired.
