Ingredients

9-12 lasagna noodles

2 tablespoons olive oil

1 medium onion, thinly sliced

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 rotisserie chicken, shredded

1 cup cream cheese, softened

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup sour cream

1 cup salsa (divided)

1/4 cup fresh cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to the package instructions until they reach an al dente texture. Once cooked, drain the noodles and lay them flat on a clean kitchen towel to cool and avoid sticking together.

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onion, red bell pepper, green bell pepper, and minced garlic. Sauté the vegetables until they are tender and fragrant, about 5-7 minutes. Enhance the flavor by stirring in the chili powder, ground cumin, smoked paprika, salt, and black pepper for an additional 1-2 minutes.

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded rotisserie chicken with the sautéed vegetable mixture. Add the softened cream cheese, half of the Monterey Jack cheese, and half of the cheddar cheese. Use a spatula to mix everything together until well combined and creamy.

Assemble the Lasagna Rolls: On a flat surface, carefully take one cooked lasagna noodle and spread approximately 1-2 tablespoons of the chicken mixture evenly across the noodle's length. Gently roll up the noodle from one end to the other, tucking in the filling as you go. Repeat this process with the remaining noodles and filling.

Prepare the Baking Dish: Spread 1/2 cup of salsa evenly across the bottom of a 9x13-inch baking dish. Arrange the rolled lasagna noodles seam side down in the dish, ensuring they are snugly fit. Pour the remaining salsa over the top of the assembled rolls.

Add Cheese: In a separate bowl, mix the remaining Monterey Jack and cheddar cheeses. Generously sprinkle this cheese mixture over the top of the lasagna rolls, ensuring an even coverage.

Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese on top is melted and bubbling, creating a delicious golden crust.

Garnish and Serve: Once baked, take the dish out of the oven and let it cool for a few minutes. Just before serving, garnish with freshly chopped cilantro for a burst of color and flavor.

Enjoy: Serve the Cheesy Chicken Fajita Lasagna Rolls warm, accompanied by extra salsa or dollops of sour cream on the side for added richness.
