2 cups cooked pasta (penne or rotini preferred)

1 cup cooked and shredded chicken breast

1 cup cherry tomatoes, halved

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (can use fresh or canned)

1 bell pepper (choose red, yellow, or orange), diced

1/4 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup mayonnaise or Greek yogurt (your choice)

2 tablespoons fresh lime juice

1 tablespoon chili powder

1 teaspoon ground cumin

Salt and pepper to taste

Optional: Sliced jalapeños for added heat

Prepare the Chicken: If not done yet, cook the chicken breast until fully cooked (about 15-20 minutes of boiling), then let it cool before shredding. Season the shredded chicken with salt, pepper, and a sprinkle of chili powder for an extra flavor kick.

    Cook the Pasta: Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente (usually about 8-10 minutes). Once cooked, drain the pasta and rinse it under cold water to stop the cooking process and cool it down.
