½ cup unsalted butter, melted

¼ cup granulated sugar

½ teaspoon ground cinnamon (optional)

For the Cheesecake Filling:

24 oz (3 packages) cream cheese, softened to room temperature

1 cup granulated sugar

3 large eggs, at room temperature

1 cup sour cream

1 teaspoon vanilla extract

Zest of 2 lemons

⅓ cup fresh lemon juice

2 cups fresh blueberries (plus extra for garnish)

For the Topping:

1 cup sour cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1 cup fresh blueberries

Instructions

Preheat the oven: Set your oven to 325°F (163°C) and allow it to fully preheat.

Prepare the crust: In a medium mixing bowl, combine the graham cracker crumbs, melted unsalted butter, granulated sugar, and optional ground cinnamon. Mix well until the crumbs are evenly coated with the butter. Firmly press this mixture into the bottom of a 9-inch springform pan, creating an even layer. Bake in the preheated oven for 10 minutes. Once done, remove the crust from the oven and allow it to cool for a few minutes.

Make the cheesecake filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it becomes smooth and creamy. Gradually add in the granulated sugar, continuing to mix until fully combined.

Incorporate the eggs: Add the eggs one at a time, mixing on low speed after each addition until just incorporated without overmixing.

Blend in sour cream and flavors: Add the sour cream, vanilla extract, lemon zest, and fresh lemon juice to the mixture. Mix until the batter is smooth, scraping down the bowl's sides as needed to ensure an even blend.

Fold in blueberries: Gently fold in the fresh blueberries with a spatula, being careful not to burst them, ensuring an even distribution throughout the cheesecake mixture.

Bake the cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Use a spatula to smooth the top. Bake in the oven for 55-65 minutes, until the edges are set and the center has a slight jiggle when gently shaken.

Cool the cheesecake: After baking, turn off the oven, slightly crack the oven door open, and allow the cheesecake to cool inside for about 1 hour. This gradual cooling helps to prevent cracks in the cheesecake.

Prepare the topping: In a small bowl, combine the sour cream, powdered sugar, and vanilla extract. Mix gently until smooth and creamy. Once the cheesecake has cooled, carefully spread the sour cream mixture over the top.

Chill and serve: Place the cheesecake in the refrigerator and allow it to chill for at least 4 hours, though overnight is preferred for optimal flavor development. When ready to serve, garnish with additional fresh blueberries and slice.

Enjoy! Carefully serve each slice, relishing the delightful balance of tart lemon, sweet blueberries, and rich creaminess in every bite.
