1 cup fresh cauliflower florets

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Cook the Pasta and Vegetables: Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to the package directions until al dente—typically about 7-8 minutes. In the final 3 minutes of cooking, add the broccoli and cauliflower florets to the pot. Once done, drain the pasta and veggies in a colander and set them aside.

    Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt the unsalted butter. Once fully melted, add the flour, whisking constantly. Cook this mixture for about 1-2 minutes until it turns bubbly and golden—this is your roux.

      Incorporate the Milk: Slowly whisk in the milk, ensuring that it integrates smoothly with the roux—avoid lumps! Keep stirring continuously for about 5-7 minutes until the sauce thickens to a creamy consistency.

        Flavor the Sauce: Stir in the garlic powder, onion powder, paprika, and season to taste with salt and pepper. Once evenly mixed, remove the saucepan from heat. Gradually add the shredded cheddar, mozzarella, and Parmesan cheese, stirring until everything melts into a luscious, creamy sauce.

          Mix Pasta with Sauce: In a large mixing bowl, combine your cooked macaroni, broccoli, and cauliflower with the cheese sauce. Gently stir until every piece of pasta and vegetable is well-coated with the rich cheese sauce.
