1 cup stone-ground grits

4 cups water (or a combination of water and chicken broth for enhanced flavor)

1 cup shredded sharp cheddar cheese

1/2 cup heavy cream

2 tablespoons unsalted butter

For the Shrimp:

1 pound large shrimp, peeled and deveined

4 slices bacon, chopped

2 cloves garlic, minced

1 tablespoon freshly squeezed lemon juice

1/2 teaspoon cayenne pepper (optional, for extra heat)

1 teaspoon smoked paprika

1/4 cup green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Salt and pepper, to taste

Prepare the Grits: In a medium saucepan, bring 4 cups of water (or broth) to a rolling boil. Gradually whisk in the stone-ground grits, reducing the heat to low immediately after. Cover the saucepan and let it simmer, stirring occasionally, until the grits have thickened, approximately 20-25 minutes. If at any point the mixture becomes overly thick, stir in additional water or broth to achieve your desired consistency.

    Finish the Grits: Once the grits are cooked, remove them from the heat. Stir in the butter, heavy cream, and shredded cheddar cheese until everything is melted and thoroughly combined. Taste and adjust seasoning with salt and pepper as needed. Keep the grits warm while you prepare the shrimp.

      Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon pieces and set them aside on paper towels to drain. Retain approximately 2 tablespoons of bacon fat in the skillet for cooking the shrimp.
