Ingredients

2 cups pasta (fusilli or penne preferred, cooked and cooled)

1 cup cooked chicken breast, diced or shredded

1 cup basil pesto (homemade or store-bought)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

2 tablespoons pine nuts, toasted (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

2 tablespoons olive oil

Instructions

Cook the Pasta: Start by bringing a large pot of salted water to a rapid boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process and cool it down.

Prepare the Chicken: If you have leftover chicken, simply shred or dice it into bite-sized pieces. For freshly cooked chicken, season it with salt, pepper, and a drizzle of olive oil. Grill or sauté until the chicken is fully cooked (internal temperature should reach 165°F/75°C). Allow it to cool slightly before dicing.

Combine Base Ingredients: In a large mixing bowl, combine the chilled pasta, diced chicken, basil pesto, halved cherry tomatoes, diced cucumber, red bell pepper, thinly sliced red onion, and sliced Kalamata olives. Use a spatula or spoon to gently toss the ingredients until they are evenly coated with pesto.

Add Feta and Nuts: Carefully fold in the crumbled feta cheese and, if desired, the toasted pine nuts, which add a delightful crunch. Taste the mixture and adjust seasoning with salt and pepper as preferred.

Chill: Cover the large bowl with plastic wrap or a lid and refrigerate for at least 30 minutes. This chilling time is essential for the flavors to develop and mingle together, making the dish even more delicious.

Serve: When you're ready to enjoy your pasta bowls, remove them from the refrigerator and give it a gentle stir. If the pasta appears a little dry, drizzle a touch of olive oil and mix again. Garnish generously with fresh basil leaves before portioning into individual bowls.

Enjoy: Serve these refreshing pasta bowls cold or at room temperature, and savor the delightful combination of flavors in this nutritious meal!
