Ingredients

1 cup orzo pasta

2 cups water

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup fresh basil leaves, chopped

Zest of 1 lemon

Juice of 2 lemons

3 tablespoons extra virgin olive oil

Salt and pepper, to taste

Instructions

Cook the Orzo: In a medium saucepan, bring 2 cups of water to a rapid boil over high heat. Once boiling, add the orzo pasta and reduce the heat to medium. Cook according to the package instructions, usually for about 8-10 minutes, or until the pasta is al dente. Once cooked, drain the orzo in a colander and set aside to cool completely.

Prepare the Vegetables: While the orzo is cooking, take this time to prepare the vegetables. Dice the cucumber into small, bite-sized pieces, halve the cherry tomatoes, and finely chop the red onion. Set all prepared vegetables aside in a large mixing bowl.

Mix the Dressing: In a separate small bowl, add the lemon zest and freshly squeezed juice from the two lemons. Whisk in the extra virgin olive oil and season with salt and pepper to taste. Continue whisking until all ingredients are well combined and the dressing is slightly emulsified. Adjust seasoning according to your preference.

Combine Ingredients: In the large mixing bowl containing the diced cucumber, halved cherry tomatoes, and chopped red onion, add the cooled orzo and the crumbled feta cheese. Drizzle the prepared lemon dressing over the salad mixture. Toss gently with a spatula or large spoon until all ingredients are well coated and evenly distributed.

Add Fresh Herbs: Carefully fold in the freshly chopped basil leaves, ensuring that they remain intact and fragrant for a burst of flavor in every bite.

Chill and Serve: Cover the salad with plastic wrap or place it in an airtight container. Refrigerate for at least 30 minutes to allow the flavors to blend beautifully. Serve the orzo salad chilled, either as a refreshing side dish or a light main course to enjoy on warm days.
