8 oz whole wheat pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (choose red or yellow), diced

1 small red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/2 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Zest and juice of 1 lemon

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the whole wheat pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta in a colander and rinse it under cold running water to halt the cooking process and cool it down.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion into bite-sized pieces. Place all the chopped vegetables into a large mixing bowl for easy tossing later.

      Combine the Ingredients: After the pasta has cooled completely, add it to the bowl with the chopped vegetables. Fold in the Kalamata olives, crumbled feta cheese, fresh parsley, and basil, making sure to distribute everything evenly.

        Make the Dressing: In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, lemon zest, and freshly squeezed lemon juice. Taste the dressing and season with salt and pepper according to your preference.
