Ingredients
  

2 cups elbow pasta

4 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

2 tablespoons butter

1 small onion, finely chopped

2 cloves garlic, minced

3 cups milk

1 teaspoon Dijon mustard

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup breadcrumbs

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    Boil the elbow pasta in a large pot of salted water until it reaches al dente, following the package directions. Drain and set aside.

      In the same pot, melt the butter over medium heat. Add the chopped onion and sauté until softened and translucent, around 4-5 minutes.

        Incorporate the minced garlic into the pot and cook for another minute until it becomes aromatic.

          Gradually whisk in the milk, followed by the Dijon mustard, paprika, salt, and black pepper. Heat the mixture thoroughly without bringing it to a boil.

            When the milk mixture is warmed, mix in the sharp cheddar cheese along with half of the grated Parmesan cheese until fully melted and creamy.

              Stir the cooked pasta into the cheese sauce, ensuring all ingredients are well combined.

                Pour the macaroni and cheese mixture into a greased 9x13 inch baking dish, smoothing it out evenly.

                  In a separate small bowl, combine the breadcrumbs with the remaining Parmesan cheese. Evenly sprinkle this mixture over the macaroni and cheese.

                    Bake in the preheated oven for 25-30 minutes or until the topping is golden and bubbly.

                      Take it out from the oven and let it rest for about 5 minutes. Top with fresh parsley before serving.
