Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh broccoli florets

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

½ cup grated Parmesan cheese (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the bite-sized chicken pieces. Season with salt, pepper, dried thyme, and paprika. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Sauté the Onion and Garlic: In the same skillet, without wiping it out, add the diced onion. Sauté for 3-4 minutes or until the onion becomes translucent. Next, add the minced garlic and cook for 1 minute more, stirring frequently to avoid any burning.

Add Broccoli: Toss in the fresh broccoli florets and continue to cook for an additional 2-3 minutes. The broccoli should start to soften yet maintain a bit of crunch.

Make the Sauce: Pour the chicken broth into the skillet and bring it to a gentle simmer. Allow it to reduce slightly for about 2-3 minutes, then reduce the heat and slowly pour in the heavy cream, stirring continuously until well combined. Let it simmer for an additional 2 minutes, allowing the sauce to thicken slightly.

Combine Everything: Return the sautéed chicken to the skillet with the broccoli. Gradually stir in the shredded cheddar cheese, mixing until it melts completely and creates a smooth, creamy coating over the chicken and broccoli. Taste the sauce and adjust the seasoning with additional salt and pepper if needed.

Serve: Remove the skillet from the heat. Generously sprinkle the grated Parmesan cheese on top and garnish with freshly chopped parsley before serving. Enjoy this comforting dish hot from the skillet, relishing its rich flavors as a delightful one-pan meal.
