1/2 cup pureed fresh strawberries

1 tsp vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare three 8-inch round cake pans by greasing and flouring them to ensure easy release after baking.

    Make the Chocolate Layer: In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. In a separate bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, alternating with the whole milk, until everything is fully combined and smooth. Pour this batter into one of the prepared pans, spreading it evenly.

      Make the Vanilla Layer: Using the same method, prepare the vanilla layer. In a clean bowl, cream the softened butter and sugar until fluffy, then mix in the eggs and vanilla extract. Sift together the flour, baking powder, baking soda, and salt, and combine it with the butter mixture, alternating with the milk. Pour this batter into the second prepared pan.

        Make the Strawberry Layer: In another bowl, cream the butter and sugar until it becomes fluffy. Add in the eggs and vanilla extract, mixing until combined. Sift in the flour, baking powder, baking soda, and salt, and mix. Incorporate the pureed strawberries and gradually add the milk until the batter is smooth. Pour this final batter into the last pan.

          Bake the Cakes: Place all three pans in the preheated oven. Bake for 25-30 minutes, checking for doneness by inserting a toothpick in the center; it should come out clean. Allow the cakes to cool in their pans for about 10 minutes, then transfer them to wire racks to cool completely.

            Prepare the Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese and butter together until they are smooth and creamy. Gradually add the powdered sugar, mixing on low speed until incorporated, then beat on high until fluffy. Stir in the vanilla extract for added flavor.

              Assemble the Cake: Once the cake layers are completely cool, it’s time to assemble. Place the chocolate layer on a serving platter and spread a generous layer of cream cheese frosting on top. Next, add the vanilla layer followed by another layer of frosting. Finally, top with the strawberry layer. Use the remaining frosting to frost the entire exterior of the cake for a smooth finish.
