1 large head of garlic

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

1/4 cup plain Greek yogurt

2 tablespoons olive oil, plus more for drizzling

2 tablespoons fresh lemon juice

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, finely chopped, for garnish

Pita chips or an array of sliced vegetables (such as carrots, cucumber, and bell peppers), for serving

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice the top off the head of garlic to expose a few of the cloves. Drizzle the exposed cloves with a bit of olive oil and wrap the head of garlic in aluminum foil. Place it in the preheated oven and roast for 30-35 minutes, or until the cloves are soft and golden. After roasting, let it cool slightly, then squeeze the individual garlic cloves out of their skins and set them aside in a bowl.

    Blend the Ingredients: In a food processor, combine the roasted garlic cloves, rinsed chickpeas, tahini, Greek yogurt, olive oil, lemon juice, ground cumin, smoked paprika, and a generous pinch of salt and pepper. Blend on high speed until the mixture is smooth and creamy. If the consistency appears too thick for your liking, gradually add water, one tablespoon at a time, while blending, until you achieve your preferred texture.

      Taste and Adjust: Give the hummus a taste and make any necessary adjustments to the seasoning. Feel free to add more salt, pepper, or lemon juice according to your preference for flavor balance.
