Creamy Roasted Garlic Mashed Potatoes

2 pounds Yukon Gold potatoes, peeled and cut into large chunks

1 head of garlic

4 tablespoons unsalted butter, softened

¾ cup heavy cream (add more if needed)

¼ cup sour cream

Salt, to taste

Freshly cracked black pepper, to taste

Fresh chives, chopped (for garnish)

Olive oil, for roasting the garlic

Preheat the Oven: Set your oven to 375°F (190°C) to prepare for roasting the garlic.

    Roast the Garlic: Carefully slice off the top of the garlic head, exposing the individual cloves. Drizzle a bit of olive oil over the exposed cloves and wrap the garlic tightly in aluminum foil. Position it on a baking sheet and roast in the preheated oven for about 30-35 minutes, or until the cloves become soft and fragrant. Once done, remove it from the oven and allow it to cool slightly before handling.

      Boil the Potatoes: While the garlic is roasting, fill a large pot with the peeled and chopped Yukon Gold potatoes. Cover them with cold water and add a pinch of salt. Bring the water to a rolling boil and cook the potatoes for approximately 15-20 minutes, or until they are fork-tender.

        Drain and Steam: Once the potatoes are cooked, drain them in a colander and return them to the hot pot. Allow the potatoes to sit for about a minute to let any excess moisture evaporate.

          Squeeze in the Garlic: When the roasted garlic is cool enough to handle, gently squeeze the cloves out of their skins and directly into the pot with the potatoes. Discard the skins.

            Mash and Mix: Add the softened butter, heavy cream, and sour cream to the pot. Using a potato masher or ricer, mash the mixture together until you reach a creamy consistency. If your mashed potatoes are too thick, feel free to incorporate more heavy cream until they're just right.
