2 medium zucchinis, sliced into thin rounds

1 cup uncooked white rice

2 cups vegetable broth

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This will ensure it’s hot and ready for baking by the time you're finished preparing the casserole.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once shimmering, add the finely chopped onion and minced garlic. Sauté for approximately 3-4 minutes until the onion is translucent and the garlic is fragrant.

      Incorporate the Zucchini: Add the thinly sliced zucchini to the skillet. Sprinkle in the dried oregano, seasoning with salt, pepper, and red pepper flakes if desired. Cook for an additional 5-6 minutes, stirring occasionally, until the zucchini is tender but still holds some shape. Remove the skillet from heat.
