Crispy Cauliflower Pita Sandwiches

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or substitute gluten-free flour if preferred)

1 cup panko breadcrumbs

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

4 whole wheat or regular pita breads

1 cup hummus (store-bought or homemade)

1 cup fresh spinach or mixed salad greens

1 cup sliced cucumbers

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

Optional: crumbled feta cheese or avocado slices for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Cauliflower: In a large mixing bowl, whisk together the flour, garlic powder, smoked paprika, ground cumin, salt, and black pepper until combined and well mixed.

      Dredge the Cauliflower: Take each cauliflower floret and dip it into the seasoned flour mixture, ensuring that each piece is well-coated while shaking off any excess flour. Next, immerse the floret in beaten eggs, allowing the extra egg to drip off. Finally, roll it in panko breadcrumbs, pressing lightly to ensure they stick. Arrange the coated florets on the prepared baking sheet, ensuring they have space to crisp up.

        Bake the Cauliflower: Place the baking sheet in the preheated oven and bake for 25-30 minutes. Be sure to flip the cauliflower halfway through the cooking time to achieve even browning and crispiness. You’ll know they’re ready when they are golden brown and have a crunchy texture.

          Warm the Pita: While the cauliflower bakes, warm the pita breads. You can do this by heating them on a skillet over medium heat for about 1-2 minutes per side, or by wrapping them in aluminum foil and placing them in the oven during the last 5 minutes of the cauliflower’s baking time.
