Crispy Chickpea & Tomato Lettuce Wraps

1 can (15 oz) chickpeas, thoroughly drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1 cup cherry tomatoes, halved

1 tablespoon freshly squeezed lemon juice

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, finely chopped

1 head of Romaine lettuce, leaves carefully separated and washed

Sriracha or your favorite hot sauce (optional, for extra heat)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it reaches the right temperature for roasting.

    Prepare the Chickpeas: In a medium mixing bowl, add the drained and rinsed chickpeas. Pour in the olive oil along with the smoked paprika, garlic powder, cumin, sea salt, and black pepper. Toss the chickpeas gently until they are evenly coated with the oil and spices.

      Roast the Chickpeas: Spread the seasoned chickpeas out on a baking sheet in a single layer, making sure they are not overcrowded. Place the baking sheet in the preheated oven and roast for approximately 25-30 minutes. Toss the chickpeas or shake the pan halfway through to ensure they roast evenly. They should come out golden brown and crispy.

        Prepare the Tomato Filling: While the chickpeas are roasting, prepare the tomato filling. In a separate bowl, combine the halved cherry tomatoes with the freshly squeezed lemon juice.
