2 large cucumbers, peeled and grated

2 cups plain yogurt (Greek or regular)

1/2 teaspoon cumin powder

1/2 teaspoon garlic powder

1 tablespoon fresh lemon juice

2 tablespoons fresh mint leaves, finely chopped

2 tablespoons fresh coriander (cilantro), finely chopped

Optional: 1/4 teaspoon red chili powder for a hint of spice

Optional: 1/4 cup finely chopped onion or scallions for added crunch

This step helps draw out excess moisture. After the time has elapsed, gently squeeze the grated cucumbers in a clean cloth or with your hands to remove any additional liquid.

    Mix Ingredients: In your crockpot, add the strained grated cucumbers. Next, incorporate the 2 cups of yogurt. If using Greek yogurt, break up any clumps for a smoother consistency. Sprinkle in the cumin powder, garlic powder, and the fresh lemon juice. If you prefer some heat, feel free to add the optional red chili powder at this stage.
