1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 small red bell pepper, diced

1 small red onion, finely chopped

1 ripe avocado, diced

1 cup shredded cheddar cheese (or a vegan alternative)

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon garlic powder

Salt and black pepper to taste

12 small flour or corn tortillas

Cooking spray or a drizzle of olive oil for greasing

Fresh cilantro, chopped, for garnish
