1 large cucumber, peeled and chopped into chunks

1 cup fresh mint leaves, firmly packed

1/4 cup fresh lime juice (approximately the juice of 2 limes)

2 tablespoons honey or agave syrup (adjust based on desired sweetness)

2 cups cold water or sparkling soda water (for a fizzy twist)

A pinch of sea salt

Ice cubes

Lime slices and fresh mint sprigs for garnish

Blend the Base: In a high-speed blender, combine the chopped cucumber, fresh mint leaves, lime juice, honey or agave syrup, and a pinch of sea salt. Blend on high until the mixture is completely smooth and well combined.

    Strain the Mixture: Place a fine mesh strainer or a piece of cheesecloth over a large pitcher. Carefully pour the blended mixture into the strainer. Use a spoon to gently press the mixture, ensuring you extract as much refreshing liquid as possible while leaving behind the pulp.

      Combine with Water: Once the pulp is strained out, add the cold water or sparkling soda water to the pitcher with the cucumber-mint liquid. Stir gently to combine. Taste the mixture and if you prefer it sweeter, gradually add more honey or agave syrup until you reach your desired sweetness.

        Chill and Serve: Prepare glasses by filling them with ice cubes. Pour the cucumber-mint mixture over the ice, allowing them to mingle. Garnish each glass with a slice of lime and a sprig of fresh mint, adding a pleasing visual detail and aroma.
