1 lb (450g) boneless, skinless chicken breasts, thinly sliced

3 tablespoons olive oil, divided

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 large red bell pepper, sliced into thin strips

1 large green bell pepper, sliced into thin strips

1 medium onion, sliced

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

8 small flour or corn tortillas

Optional toppings: sour cream, salsa, diced avocado, shredded cheese

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the thinly sliced chicken with 2 tablespoons of olive oil, chili powder, ground cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything until the chicken is evenly coated with the spices. Cover the bowl and let it marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for enhanced flavor.

    Cook the Veggies: Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the sliced red and green bell peppers along with the onion.
