Ingredients

8 oz. spaghetti or linguine pasta

1 lb. large shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust based on your spice preference)

1/4 cup white wine (optional but adds depth)

1 lemon, juiced and zested

1/4 cup fresh parsley, finely chopped

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Sauté the Shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of the butter. When the butter is bubbling, add the shrimp in a single layer, season with salt and pepper, and cook for about 2-3 minutes on each side until they are pink and opaque. Once cooked, remove the shrimp from the skillet and set aside on a plate.

Prepare the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. When melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute, stirring constantly, until fragrant but not browned.

Deglaze the Pan: If using, carefully pour in the white wine to deglaze the pan, using a wooden spoon to scrape up any flavorful bits stuck to the bottom. Allow the wine to simmer for 2-3 minutes until slightly reduced and aromatic.

Combine Ingredients: Reduce the heat to low and stir in the lemon juice and zest. Return the sautéed shrimp to the skillet and gently toss to combine. Gradually add the cooked pasta, tossing continuously to coat it in the garlic butter sauce. If the pasta appears too dry, mix in a few splashes of the reserved pasta water until you achieve your desired consistency and creaminess.

Finish With Herbs: Stir in the chopped parsley and taste to adjust seasoning, adding more salt and pepper as needed.

Serve: Plate the garlic butter shrimp pasta, garnishing each serving with a generous sprinkle of grated Parmesan cheese and a few extra parsley bits for a pop of color. Serve immediately and enjoy this delightful dish!
