Ingredients

4 bone-in, skin-on chicken thighs

1 cup fresh or frozen corn kernels

4 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon butter

1 teaspoon paprika

1 teaspoon dried thyme

Salt and freshly ground pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (optional, for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) so it’s ready for baking when the time comes.

Prepare the Chicken: Use paper towels to pat the chicken thighs dry thoroughly; this will ensure that the skin becomes crispy during cooking. Generously season both sides of the chicken with salt, freshly ground pepper, paprika, and thyme, making sure to coat them evenly.

Sear the Chicken: In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. When the oil is shimmering and hot, carefully place the chicken thighs skin-side down in the skillet. Sear them for about 5-7 minutes, or until the skin is nicely golden brown. Flip the chicken and continue to sear the other side for another 5 minutes. Once done, remove the chicken from the skillet and set it aside on a plate.

Cook the Garlic and Corn: Without cleaning the skillet, reduce the heat to medium. Add the remaining tablespoon of olive oil and the butter to the skillet. Once the butter has melted completely, introduce the minced garlic, sautéing for about 1 minute until it becomes fragrant (watch closely to prevent burning). Then, add in the corn kernels and stir them into the buttery garlic mixture. Cook for approximately 3-4 minutes until the corn is heated through and slightly caramelized. Season with a small pinch of salt and pepper to enhance the flavors.

Combine and Bake: Return the seared chicken thighs to the skillet, nestling them on top of the sweet corn. Carefully transfer the entire skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken thighs reach an internal temperature of 165°F (75°C).

Finish and Serve: Once the chicken is cooked, carefully remove the skillet from the oven and let it rest for about 5 minutes. Before serving, garnish the dish with freshly chopped parsley for a pop of color. Serve with optional lemon wedges on the side for a zesty brightness that complements the savory flavors.

                - Presentation Tips: Serve the chicken and corn directly from the skillet for a rustic presentation, or plate individually, ensuring to include some of the buttery corn underneath each thigh for a beautiful and appetizing arrangement.
