Easy Homemade Mac and Cheese with Spinach

8 oz elbow macaroni

2 cups fresh spinach, chopped

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

2 cups milk

¼ cup unsalted butter

¼ cup all-purpose flour

1 tsp garlic powder

½ tsp onion powder

½ tsp salt

¼ tsp black pepper

¼ tsp nutmeg (optional)

½ cup breadcrumbs (for topping)

2 tbsp olive oil (for breadcrumbs)

Instructions
 

Cook the Pasta: In a large pot, bring 4-6 cups of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and set it aside in a colander.

    Sauté Spinach: In the same pot used for the pasta, drizzle a splash of olive oil over medium heat. Add the chopped spinach and sauté for approximately 2-3 minutes, or until wilted and soft. Remove from the pot and set aside.

      Make the Roux: In the same pot, melt the unsalted butter over medium heat. Once fully melted, whisk in the all-purpose flour, stirring constantly for about 2 minutes. This will create a roux, which should take on a light golden color.

        Create the Cheese Sauce: Gradually whisk in the milk, ensuring no lumps form. Continue to stir the mixture until it thickens, roughly 5 minutes. Once thickened, mix in the garlic powder, onion powder, salt, black pepper, and nutmeg (if using), ensuring everything is well combined.

          Add Cheese: Remove the pot from heat. Stir in the shredded sharp cheddar and mozzarella cheese, mixing until fully melted and smooth, creating a creamy cheese sauce.

            Combine Mac and Cheese with Spinach: Return the drained macaroni and sautéed spinach to the pot with the cheese sauce. Stir gently until the pasta and spinach are evenly coated with the creamy cheese sauce.
