Ingredients

1.5 lbs pork tenderloin

2 ripe peaches, diced (or 1 cup canned peach slices, well-drained)

1/4 cup peach preserves

2 tablespoons soy sauce

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a medium bowl, mix together the diced peaches, peach preserves, soy sauce, Dijon mustard, apple cider vinegar, garlic powder, onion powder, black pepper, and salt. Stir well until the mixture is smooth and the peaches are partially broken down, creating a cohesive marinade.

Marinate the Pork: Place the pork tenderloin into a resealable plastic bag or a shallow dish. Pour half of the peach marinade over the pork, ensuring it's well-coated; reserve the other half for later use. Seal the bag or cover the dish and refrigerate for at least 1 hour or overnight to maximize flavor infusion.

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it's fully heated before you bake the pork.

Sear the Pork: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Remove the pork from the marinade (discard any marinade that has touched the raw meat) and carefully place it in the skillet. Sear the pork for about 4-5 minutes on each side until it develops a golden-brown crust.

Bake the Pork: After searing, brush the reserved peach marinade generously over the pork. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the internal temperature of the pork reaches 145°F (63°C) for optimal doneness.

Rest the Pork: Once baked, carefully remove the tenderloin from the oven and let it rest for about 5 minutes. This resting period allows the juices to evenly redistribute, resulting in a more flavorful and juicy pork loin.

Serve: Slice the pork tenderloin into medallions and arrange them on a serving platter. Drizzle any remaining peach glaze from the skillet over the slices for added flavor. Garnish with freshly chopped parsley for a pop of color.

Enjoy: Pair your sweet and sticky peach glazed pork tenderloin with your favorite sides, such as roasted vegetables or fluffy rice, to soak in every bit of that delicious peach glaze!
