Easy Turkey and Sweet Potato Shepherd's Pie

1 pound ground turkey

1 large sweet potato, peeled and cut into 1-inch cubes

1 cup frozen peas and carrots blend

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup low-sodium chicken broth

2 tablespoons Worcestershire sauce

Salt and freshly cracked pepper, to taste

½ cup whole milk

2 tablespoons unsalted butter

Fresh parsley, chopped, for garnish (optional)

Prepare the Sweet Potato: In a medium pot, add the cubed sweet potatoes and cover them with salted water. Bring to a boil over high heat, then reduce to a simmer. Cook until the sweet potatoes are fork-tender, about 15-20 minutes. Drain them well and return to the pot. Add the milk and butter, then mash until creamy and smooth. Season with salt and pepper to taste. Set aside.

    Cook the Turkey Mixture: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, approximately 3-4 minutes. Add the ground turkey to the skillet, using a spatula to break it into smaller pieces. Cook, stirring occasionally, until the turkey is fully browned, about 5-7 minutes.

      Add Vegetables and Seasoning: Incorporate the frozen peas and carrots into the turkey mixture, followed by the dried thyme, dried rosemary, Worcestershire sauce, and chicken broth. Stir to combine and season generously with salt and freshly cracked pepper. Allow the mixture to simmer for 5-10 minutes, enabling the flavors to meld and the sauce to thicken slightly.

        Assemble the Pie: Preheat your oven to 400°F (200°C). In a spacious baking dish, evenly spread the turkey and vegetable mixture across the bottom. Gently top it with the creamy mashed sweet potato, smoothing it out to cover the filling completely.
