Easy Veggie-Loaded Turkey Tacos

1 lb ground turkey

1 cup bell peppers (any color), diced

1 cup zucchini, diced

1 cup corn (fresh, canned, or frozen)

1 small red onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon taco seasoning (store-bought or homemade)

1 teaspoon ground cumin

Salt and pepper, to taste

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Lime wedges (for serving)

Instructions
 

Sauté the Vegetables: Start by heating the olive oil in a large skillet over medium heat. Once hot, add the diced red onion, bell peppers, zucchini, and minced garlic. Sauté the mixture for about 5-7 minutes, stirring occasionally, until the vegetables are tender and aromatic.

    Cook the Turkey: Push the sautéed vegetables to one side of the skillet to create space. Add the ground turkey to the empty side and cook it, breaking it apart with a spatula while stirring. Cook until the turkey is well-browned and fully cooked through, approximately 6-8 minutes.

      Combine & Season: Once the turkey is cooked, mix it together with the sautéed vegetables in the skillet. Sprinkle in the taco seasoning and ground cumin. Season with salt and pepper to taste. Stir everything together well and continue to cook for an additional 2-3 minutes to allow the flavors to meld.

        Warm the Tortillas: In a separate pan over low heat or in the microwave, warm the tortillas until they become pliable. This will make them easier to fold and serve.

          Assemble the Tacos: Take a small tortilla and place a generous scoop of the turkey and veggie mixture on top. Add a sprinkle of fresh cilantro, a few slices of avocado, and finish with a squeeze of lime juice to add brightness.

            Serve & Enjoy: Plate the tacos on a serving dish and provide lime wedges on the side for guests to add extra zest as desired.
