Easy Zucchini & Corn Fritters

2 medium zucchinis, grated

1 cup fresh corn kernels (or 1 cup frozen corn, thawed)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/2 cup grated Parmesan cheese

2 green onions, finely chopped

1 teaspoon baking powder

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

Olive oil, for frying

Fresh herbs (such as parsley or cilantro) for garnish, optional

Prep the Zucchini: Begin by grating the zucchinis using a box grater. After grating, transfer the zucchini to a clean kitchen towel (or cheesecloth), and twist the towel to squeeze out as much excess moisture as you can. This step is vital to ensure your fritters are crispy and not soggy!

    Combine the Ingredients: In a large mixing bowl, add the drained grated zucchini and fresh corn kernels. Next, incorporate the all-purpose flour, cornmeal, eggs, grated Parmesan cheese, chopped green onions, baking powder, garlic powder, paprika, along with salt and pepper to taste. Mix thoroughly until all ingredients are well combined and form a thick, cohesive batter.

      Heat the Oil: In a large skillet, pour in enough olive oil to create a depth of about 1/4 inch. Heat the oil over medium heat. To check if the oil is hot enough, drop a small spoonful of the batter into the skillet; it should immediately sizzle upon contact.

        Fry the Fritters: Using a tablespoon or a small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil, ensuring there is adequate space between each fritter. Gently press down on each fritter with the back of your spoon to flatten them slightly, promoting even cooking. Fry for approximately 3-4 minutes on each side, or until they are golden brown and crispy.

          Drain and Continue: Once the fritters are cooked, transfer them to a plate lined with paper towels to soak up any excess oil. Continue frying the remaining batter in batches, adjusting the oil level as needed.
