1 lb ground beef (or turkey for a lighter option)

1 onion, diced finely

2 cloves of garlic, minced

1 bell pepper, diced (any hue)

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

2 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp sea salt

1/4 tsp ground black pepper

2 cups beef broth (or vegetable broth)

Optional garnishes: shredded cheese, sour cream, sliced green onions

Instructions
 

In a pan set over medium heat, cook the ground beef (or turkey) until browned and fully cooked. Drain any excess fat, then transfer the meat into the slow cooker.

    Incorporate the diced onion, minced garlic, and chopped bell pepper into the slow cooker with the meat.

      Add the contents of the can of diced tomatoes with green chilies, along with the kidney beans, black beans, and corn.

        Sprinkle in the chili powder, ground cumin, smoked paprika, sea salt, and black pepper. Mix everything together thoroughly.

          Pour the beef broth over the combined ingredients, ensuring that they are all covered.

            Place the lid on the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the flavors have melded and the vegetables are tender.
