Ingredients

12 oz (340g) pasta (penne or rigatoni are great options)

1 block (8 oz) feta cheese

3 cups cherry tomatoes, halved

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fine sea salt

½ teaspoon freshly ground black pepper

3 tablespoons extra virgin olive oil

1 cup fresh basil leaves, roughly chopped

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

¼ teaspoon red pepper flakes (optional, for an extra kick)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C), ensuring it's properly heated for even cooking.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until it is al dente. Once cooked, drain and set aside.

Prepare the Bake Dish: In a spacious 9x13 inch baking dish, combine the halved cherry tomatoes, minced garlic, dried oregano, sea salt, black pepper, and olive oil. Use a spoon or spatula to toss the ingredients until the tomatoes are fully coated in the spices and oil.

Add Feta: Carefully place the block of feta cheese in the center of the baking dish, ensuring it's nestled amongst the tomatoes and seasoning mixture.

Bake the Mixture: Transfer the dish to your preheated oven and bake for approximately 25 minutes, or until the tomatoes are blistered and juicy while the feta becomes soft and slightly golden at the edges.

Combine with Pasta: After baking, remove the dish from the oven. Begin by gently stirring the roasted tomatoes and feta together, breaking the feta into bite-sized chunks. Next, add the cooked pasta and fresh basil to the mixture. Toss everything thoroughly until all ingredients are well integrated.

Add Cheese Toppings: Evenly sprinkle the shredded mozzarella and grated Parmesan cheese over the top of the pasta bake. If desired, add a pinch of red pepper flakes for an added touch of spice.

Final Bake: Place the baking dish back into the oven and bake for an additional 15-20 minutes until the cheese is melted, bubbly, and slightly golden.

Serve: Once finished, take the dish out of the oven and let it cool for a few minutes before serving. For an extra fresh touch, garnish with more chopped basil. Serve warm and enjoy!
