Ingredients

2 cups plain Greek yogurt

1 cup unsweetened applesauce

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

1 tablespoon maple syrup (or honey)

1 cup diced apples (fresh or canned, drained)

1 cup granola (your favorite variety)

1/4 cup chopped pecans or walnuts (optional)

Pinch of salt

Instructions

Mix the Base: In a large mixing bowl, combine the Greek yogurt, applesauce, vanilla extract, ground cinnamon, maple syrup, and a pinch of salt. Using a whisk, stir together until the mixture is completely smooth and the ingredients are well blended, ensuring there are no lumps.

Add Apples: Carefully fold in the diced apples with a spatula or wooden spoon, making sure they are evenly distributed throughout the yogurt mixture for a balanced flavor in every bite.

Prepare the Pan: Line an 8x8 inch (or a comparable-sized) baking dish with parchment paper. Leave some parchment paper hanging over the sides to facilitate easy removal of the frozen yogurt slab once set.

Layer the Mixture: Pour the creamy yogurt and apple mixture into the prepared baking dish. Use a spatula to spread it out evenly, smoothing the top for a polished appearance.

Add Granola: Generously sprinkle the granola over the top of the yogurt mixture. If you’re using them, sprinkle the chopped pecans or walnuts on top as well, adding not only texture but also a nutty flavor.

Freeze: Transfer the baking dish to the freezer and allow it to freeze for at least 4 hours, or until the mixture is completely firm and solid.

Slice and Serve: After it has frozen solid, remove the baking dish from the freezer. Grip the overhanging parchment paper and gently lift the yogurt slab out of the dish. Place it on a cutting board and slice into bars or squares, as desired.

Enjoy: Serve the slices immediately for a delightful treat, or store them in an airtight container in the freezer. These make for a refreshing snack that you can enjoy anytime!
