2 ripe bananas, fully mashed

1 cup rolled oats

1 cup milk (or your choice of non-dairy alternative)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

A pinch of salt

1/4 cup mini chocolate chips or chopped nuts (optional)

1/4 cup maple syrup (for drizzling)

6-8 popsicle sticks

Instructions
 

Prepare the Mixture: In a large mixing bowl, use a fork to mash the ripe bananas until they are smooth and creamy. Add in the rolled oats, milk, vanilla extract, baking powder, ground cinnamon, and a pinch of salt. Stir the mixture thoroughly until all ingredients are well combined. If you're opting for chocolate chips or nuts, gently fold them into the batter at this point.

    Fill the Molds: Carefully pour the prepared pancake batter into popsicle molds, filling each cavity about three-quarters full. If you don't have popsicle molds on hand, small paper cups or muffin tins lined with parchment paper also work perfectly.

      Insert Sticks: If using popsicle molds, place a popsicle stick into the center of each filled mold, ensuring it stands upright. For cups or muffin tins, it’s best to place the sticks in the centers after the batter has stiffened slightly in the freezer for about 30 minutes.

        Freeze: Transfer the filled molds into the freezer and allow them to freeze for at least 4 hours, or until the pops are completely solid.

          Unmold and Serve: To remove the pancake pops from the molds, gently pull them out. If they're difficult to release, run the molds under warm water for a few seconds to loosen them.
