2 cups fresh blackberries (or thawed frozen blackberries)

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1/2 cup chilled coconut cream

1/2 cup plain Greek yogurt

1/4 cup unsweetened shredded coconut

1 tablespoon freshly squeezed lime juice

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: additional shredded coconut for topping

Prepare the Blackberry Purée: In a blender, combine the blackberries with the honey (or maple syrup). Blend until you achieve a smooth consistency. If you desire a seedless purée, pour the mixture through a fine mesh sieve, pushing it down with a spoon to extract the liquid and discard the seeds. Set the purée aside.

    Make the Coconut Cream Mixture: In a large mixing bowl, whisk together the chilled coconut cream, plain Greek yogurt, shredded coconut, freshly squeezed lime juice, vanilla extract, and salt. Continue whisking until the mixture is smooth and well incorporated.

      Layering: Line an 8x8 inch baking dish with parchment paper for easy removal. Pour half of the coconut cream mixture into the dish, spreading it evenly across the base. Spoon half of the blackberry purée over the coconut layer. Using a knife or skewer, gently swirl the blackberry purée into the coconut layer to create a marbled effect. Repeat this process with the remaining coconut cream and blackberry purée, ensuring an even distribution.

        Freeze: Cover the baking dish tightly with plastic wrap or aluminum foil. Place it in the freezer and allow it to freeze for a minimum of 4-6 hours, or until the mixture is completely solid.
