Taste testing is a pivotal part of any recipe development, especially for frozen desserts like our Creamy Frozen Peach Delight Cups. After blending your mixture of ripe peaches, Greek yogurt, and natural sweeteners, take a moment to sample it. This step allows you to adjust the flavors to your liking. If you find the mixture too tart, consider adding a touch more honey or maple syrup. Conversely, if it's too sweet, a squeeze of lemon juice can balance the flavors beautifully. Ingredients

2 cups ripe peaches, peeled and diced

1 cup plain Greek yogurt (or your preferred type of yogurt)

1/4 cup honey (or substitute with maple syrup for a vegan option)

1 teaspoon pure vanilla extract

1 tablespoon freshly squeezed lemon juice

A pinch of salt

Optional toppings: granola, chopped nuts (such as almonds or walnuts), or shredded coconut

Instructions

Prepare the Peaches: If using fresh peaches, wash, peel, and dice them into small, uniform pieces. For frozen peaches, allow them to soften at room temperature for about 10-15 minutes to aid in blending.

Blend Ingredients: In a high-speed blender or food processor, combine the diced peaches, Greek yogurt, honey, vanilla extract, lemon juice, and just a pinch of salt. Blend on high until you achieve a velvety smooth consistency, ensuring there are no chunky bits of peach remaining.

Taste and Adjust: Before proceeding, taste the peach mixture. If it's not sweet enough for your liking, add a bit more honey or maple syrup. Blend again briefly to incorporate any additional sweetener.

Fill the Cups: Using a spatula or spoon, carefully spoon the creamy peach yogurt mixture into silicone muffin cups or small cup molds, filling each cup to the brim.

Freeze: Arrange your filled cups in the freezer and allow them to freeze for a minimum of 4-6 hours, or until they are rock solid.

Serve and Enjoy: When you're ready to serve, gently pull the yogurt cups from their molds. If they’re stubborn, run warm water over the outside of the molds for a few seconds to help release them. Serve your frozen peach delights topped with a sprinkle of granola, a handful of chopped nuts, or a sprinkle of shredded coconut for delightful texture and flavor contrasts.
