2 cups fresh or frozen pineapple chunks

1 cup coconut milk (choose canned or carton based on preference)

1 ripe banana, peeled

2 tablespoons chia seeds

1 tablespoon honey or maple syrup (optional, adjust to taste)

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: shredded coconut, chopped nuts (such as almonds or walnuts), or additional fresh pineapple pieces

Instructions
 

Blend the Base: In a high-powered blender, combine the pineapple chunks, coconut milk, ripe banana, chia seeds, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Blend on medium-high speed for about 1-2 minutes, or until the mixture is silky smooth and creamy.

    Check Consistency: After blending, taste the mixture. If you desire more sweetness, add additional honey or maple syrup and blend briefly to combine. For a thicker smoothie texture, incorporate a bit more chia seeds, blending for a few seconds until well mixed.

      Prepare Molds: Carefully pour the smoothie mixture into popsicle molds. Leave a small amount of space at the top of each mold to allow for expansion as the mixture freezes.

        Insert Sticks: If your molds are designed with built-in sticks, simply place them in the center. If your molds require additional sticks, insert wooden popsicle sticks into the middle of each mold.

          Freeze: Gently place the filled molds in the freezer. Allow them to freeze completely for at least 4-6 hours or until they are firm to the touch.

            Release Pops: When you're ready to enjoy, run warm water over the outside of each popsicle mold for a few seconds. This will help to loosen the popsicles. Carefully pull on the sticks to remove the frozen treats.
