Frozen Strawberry Kiwi Pops

Ingredients
  

2 cups fresh strawberries, hulled and sliced

2 ripe kiwis, peeled and diced

1 cup coconut water (or your favorite fruit juice)

2 tablespoons honey or maple syrup (adjust according to sweetness preference)

1 tablespoon fresh lime juice

A pinch of salt

Popsicle molds

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Strawberry Mixture:

    In a blender or food processor, combine the sliced strawberries, coconut water (or fruit juice), honey (or maple syrup), lime juice, and a pinch of salt. Blend until you achieve a smooth consistency. Taste the mixture, and if you prefer it sweeter, add more honey or syrup as needed, blending again to incorporate.

      Fill the Molds with Strawberry Mixture:

        Carefully pour the strawberry blend into your popsicle molds, filling each mold about halfway full to allow space for the kiwi layer.

          Incorporate the Kiwi:

            In a separate bowl, place the diced kiwis. You can choose to gently mash them for a smoother texture or leave them as is for a chunkier bite. Spoon the kiwi into the molds over the strawberry mixture until each mold is nearly full. For a fun look, you may gently swirl the two mixtures together or keep them distinct for a layered effect.

              Insert the Sticks:

                If your popsicle molds come with stick holders, insert the sticks right away. If not, place the molds in the freezer for about 30-45 minutes, or until the mixture is slightly firm, and then insert the sticks.

                  Freeze the Pops:

                    Allow the popsicles to freeze for a minimum of 4 hours, or until they are completely solid. For best results, overnight freezing is ideal.

                      Unmold and Serve:

                        When ready to serve, run warm water over the outside of the molds for a few seconds. This will help loosen the pops. Gently pull them out from the molds and serve immediately. For an extra touch, garnish with fresh mint leaves on top.
