Ingredients

2 ripe bananas, thoroughly mashed

1 cup Greek yogurt (plain or vanilla flavored)

1½ cups rolled oats

¼ cup honey or maple syrup

1 teaspoon pure vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon sea salt

½ cup chopped nuts (choose from walnuts, pecans, or almonds)

½ cup dark chocolate chips (optional)

Fresh fruit (such as berries or sliced bananas for topping, optional)

Instructions

Prepare the Baking Dish: Begin by lining an 8x8 inch baking dish with parchment paper, ensuring some of the paper overhangs the edges. This will make it easier to lift the bars out later.

Mix Liquid Ingredients: In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey (or maple syrup), and pure vanilla extract. Using a fork or whisk, mix until the mixture is well-blended and creamy.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, ground cinnamon, and sea salt until evenly mixed.

Incorporate Mixtures: Gradually fold the dry oat mixture into the wet banana mixture, using a spatula or wooden spoon to combine until the oats are thoroughly mixed into the batter and there are no dry patches.

Add Nuts and Chocolate: Gently fold in the chopped nuts and dark chocolate chips (if you choose to include them), ensuring they are evenly distributed throughout the mixture without breaking the chocolate pieces.

Transfer the Mixture: Spoon the combined mixture into the lined baking dish, using a spatula to spread it out evenly. Press down firmly to compact the mixture, ensuring it holds together when cut.

Freeze the Mixture: Place the filled baking dish in the freezer and allow it to freeze for a minimum of 4 hours, or until the bars are completely solid to the touch.

Cut into Bars: Once frozen solid, carefully lift the bars out of the baking dish using the overhanging parchment paper. Place on a cutting board and cut into squares or bars of your desired size.

Serve and Enjoy: You can serve the bars directly from the freezer for a firmer treat or allow them to sit at room temperature for a couple of minutes for a softer texture. If desired, top with fresh fruit just before serving for an extra burst of flavor.

Prep Time: 15 minutes | Total Time: 4 hours 15 minutes | Servings: 12 bars

                      - Presentation Tips: Arrange the bars on a colorful platter and garnish with additional fresh fruit or a sprinkle of nuts for a visually appealing touch.
